Edilberto Torres Sanchez, a second-generation coffee producer in San Antonio, Huabal, has recently ventured into processing naturals after successful trials.
Growing catuai and cattura varieties at an altitude of 1650masl, Edilberto meticulously uses perfectly ripe cherries and employs a 25 to 30-day drying process on raised beds.
Huabal, situated in the Jaén province of Cajamarca, is a region with immense potential for quality coffee. Despite poor infrastructure, many producers in the area are elevating their farms above 1800masl, abandoning catimores in favor of caturra, bourbon, and catuai due to higher premiums for quality.
The diverse climate and soil conditions across Huabal's various villages contribute to a wide range of cup profiles and complex, delicious coffees.
